How to make Pumpkin Chocolate chip muffins cotton soft


Preparing a Halloween party but stuck with dessert ideas. After all day’s hard work, the energy level is low, yet, you crave to go further than conventional cookies. How about an awesome-tasting Pumpkin Chocolate chip muffins recipe that doesn’t need much harsh cooking?

Pumpkin is vital in keto and paleo diets, so, I thought to make my Pumpkin muffins healthier with low sugar. Almond flour keeps them friendly for gluten allergies. The Pumpkin chocolate chip muffin recipe is filling. Rich choco chips are so tempting!

The tried and tested secret formula is out of my kitchen.


  • Almond flour 2 cups
  • Gluten-free Baking powder 1/4 teaspoon
  • Baking soda ¼ teaspoon
  • Water ¼ cup
  • Eggs 4 No.s
  • Coconut oil ¼ cup
  • A pinch of salt
  • Stevia powder 2 tbsp
  • Pumpkin puree (homemade and unsweetened) 1/2 tbsp
  • Choco chips and Pumpkin seeds 1 cup
  • Vanilla essence 1 teaspoon
  • Pie spices (1/4 tsp each of cinnamon, cardamom, ginger powder, and clove powder)
  • Cream cheese frosting for a special festive touch



  • Mix all the dry ingredients, almond flour, baking powder, baking soda, all spices, and salt in a large bowl.
  • In another bowl, whisk together the pumpkin puree and whole eggs. To this add coconut oil and sweetener and blend well with a whisk or hand blender. Flavor it with vanilla essence.
  • Before going ahead preheat the oven to 350˚F or 190˚C. Line the cavities of a muffin tray with paper cups.

  • Mix the dry flour combination and egg mix into a velvety batter. If you find the batter parched add little water or if the Pumpkin Chocolate Chip muffins batter is runny whisk and add one tablespoon of almond flour.
  • Spoon the pumpkin mixture in the cup about 2/3. Pushing the batter to the sides with the index finger, make a well halfway through the mixture. Fill this well with pre-prepared cream cheese frosting. Cover with muffin mixture.
  • Sprinkle chocolate chips and pumpkin seeds before taking them to the oven.
  • Bake for half an hour while momentarily checking in between. The top will appear firm caramel colored while it remains moist inside.
  • Take them out on a cooling rack. The mouth of everyone around might be full of water by now. Let the muffins cool before serving.
