1. Baked Sole with Mint and Ginger-

Grind a mixture of mint leaves, oil, pepper, and salt in a blender to form a smooth paste. Apply the paste on the slices of fish; put it on the baking pan and bake it for 15 minutes or till it is evenly cooked. Serve Ginger and mint Sole hot with rice along with a salad of tomato. 2. Mint and Ginger Prawns-

Keep fresh mint leaves to garnish. Prepare a marinade by mixing grated lime zest, lime juice, grated ginger, crushed garlic clove with 1 tsp sesame oil. Put a little oil in pan and heat. Add the prawns to the dressing prepared, coat well. Heat the oil in a skillet. Now add prawns and cook for 1-2 minutes on medium flame. Put in all veggies on a serving platter. Place the cooked prawns on them. Pour the dressing over the prawns. Garnish with mint leaves and serve hot with fried rice.

Garnish with chopped mint leaves and serve with the main course.
