If Santa Claus is the reason for kids to wait for Christmas; delicious cake lures everyone. Here, we present the mouth-watering authentic Christmas cake recipe to add stars to the celebration.
Ingredients
- Black Currants- 425 gm
- Golden raisins & Sultanas- 250 gm
- Dried apricots- 150 gm (ready to eat, finely chopped)
- Mixed candied peal- 110 gm
- Brandy- 4 tbsp and a little extra
- Plain flour- 300 gm
- Ground mixed spice- 1 tsp (including cardamom, cinnamon, and cloves)
- Freshly grated nutmeg-1/2 tsp
- Unsalted Softened butter- 300 gm (a little for greasing)
- Dark Muscovado sugar- 300 gm
- Medium sized eggs- 5
- Large lemon and orange- 1each (finely grated zest)
- Whole almonds- 60gm (chopped roughly)
Step by Step Procedure for Christmas cake
- Mix the dry fruits and candied peel in a big bowl and add 4 tbsp of brandy. Stir and mix well, cover and soak it overnight.
- Now, preheat the oven at 150°C or 300F. The temperature is kept a little low as the cake needs to be baked on low heat for a longer period of time. As the cake is loaded with sugar, brandy, and fruits the high temperature will burn the cake from outside and remain uncooked inside.
- Put all the ingredients, except almonds, in a big bowl. Beat them with an electric mixer until mixed well. Put the nuts and soaked peels in the batter. Stir well to have a smooth batter.
- Grease a deep 9-inch tin along with the greaseproof paper. Cover the outside with the butter paper. The butter paper acts as insulation and will prevent the cake from burning outside.
- Bake the cake for 4-5 hours until firm to push. You know the traditional method of checking a well-cooked cake! A knife pushed into it comes out clean is a sign that the cake is baked well. Now leave the cake to cool before de-molding it.
- Decorate the cake with icing sugar, dry fruits, and fruits. Catch the spirit of festivity and place decorative ribbons around your Christmas cake.
