Ingredients for roasted lemon chicken
Number of Servings- 3 to 4
1 whole chicken (backbone removed)
2 tbsp butter
2 tsp freshly ground black pepper
1large bunch fresh thyme
1 tsp fennel seeds
1 sliced lemon
7-8 Garlic cloves
1 Sliced onion
White wine like Sauvignon Blanc or Unoaked Chardonnay
1cup chicken stock
1 cup diced carrots and potatoes
Step-by-step process
Step 1
Remove any excess fat and other layers from the spatchcocked chicken, keeping the skin intact. Wash and pat dry it with a kitchen towel, inside and outside. Make a bed of onion slices, potato, and carrot dices in a pan large enough to accommodate chicken.
Prepare the oven by preheating at 425 degrees.
Step 2
Lay chicken over the bed. Stuff sliced lemon, garlic, and a few sprigs of thyme in the cavity. Place 2 halves of lemon and a whole garlic clove on the sides.
Melt butter in a bowl, add fennel seeds and chopped thyme to it. Brush this butter outside of the chicken. Sprinkle salt and pepper.
Step 3
Tuck the chicken wings under the body and tie the legs together with twine.
Drizzle dry white wine in the pan to deglaze it. If you want to add chicken stock, you can add it to the roasted chicken.
Step 4
Slide the pan into the hot oven. Roast the chicken for 1½ hours till it forms a nice golden crust.
Prepare the gravy with the chicken stock you get after roasting the chicken. Add a hint of wine. Cook on high heat for a few minutes till the gravy thickens.
Strain the gravy and season with salt to taste.
Serving:
Slice the chicken and serve it hot with brown rice. Pour the hearty, warm gravy over the chicken slice.
