Ingredients for Mushroom Stir-Fry:

1 tablespoon hibiscus powder

100 grams Button mushrooms, sliced

100 grams of Shiitake mushrooms

1 onion, thinly sliced

2 cloves garlic, minced

1 tsp ginger

¼ cup spring onion

1 bell pepper, cubed

1 cup broccoli florets

2 tablespoons soy sauce/stir-fry sauce

1 tablespoon olive oil

1 tablespoon cornflour

Salt and pepper to taste

Cilantro leaves

Instructions:

Cleaning the mushroom is a significant step to begin. Rubbing with wheat flour scrubs off all the dirt from the surface. Now, rinse them with clear water and dry the mushrooms on a kitchen towel. Slice into medium-thick steaks.

Heat olive oil in a non-stick pan over medium flame. Add ginger, garlic, green chilies, spring onion, and sliced red onions to the oil. Sauté on high heat.

Add bell pepper and broccoli florets to the pan. Sauté and cook for 2-3 minutes more, but the veggies should still have a crunch.

Add the sliced mushrooms. Toss and cook until the water reduces and starts browning.

Soya sauce or stir-fry sauce makes the preparation saucy. You may also add any savory sauce of your choice.

Hibiscus powder paste gives tartness to the dish, making it unique. Prepare a paste of hibiscus powder with water before adding, it will help to mix evenly. Stir well to coat the vegetables.

To thicken the sauce, add corn flour slurry to the vegetables. This is optional.

Season with salt and pepper to taste. Cook for 2-3 minutes more or until everything combines well and heated through.

Garnish with cilantro leaves and spring onion greens. Serve hot.
