Bread baking: Sweltering heavenly pleasure with potato water

  • Bread flour- 6 ½ cups
  • Sugar- ½ cup
  • Butter (softened at room temperature)- 12 Tablespoon
  • Salt- 2 ½ Teaspoons
  • Instant dry yeast- 1 Tablespoon
  • Potato water- 1 ½ cups
  • Mashed Potatoes- 1 cup
  • Eggs (large)- 2
  • Milk- 2 cups


  • Take warm potato water and milk in the stand mixer’s bowl. Sprinkle dry yeast over them and keep it aside for 15 minutes. This resting time allows the yeast to activate.
    You will see bubbles rising in the bowl. This signifies your yeast is now fermented.
  • Add flour, sugar, and mashed potatoes to the activated yeast. The paddle attachment of the stand mixer brings the dry and wet ingredients together. Beat for about 4-5 minutes. Then, scrape the sides and bottom.
  • Now replace the paddle attachment with the dough hook. Add butter to the dough. Beat for 5-7 minutes on medium-high speed. The dough turns smooth and shiny. Also, the sides and bottom are clean now.
  • Butter a bowl and transfer the dough to it. Smoothen it further. Cover the bowl with cling wrap. Set it aside for 30 minutes. You will see that the dough will double in size. Sometimes it’s crowned over the border of the bowl.
  • Divide the dough into 2 parts and make 2 logs from it. Place them in two 9*5 greased pans.
  • Cover the pans with a damp cloth and set them aside in a warm place for another half an hour to rise.

Baking the bread in the oven:

  • Preheat the oven at 350˚C or 662˚F.
  • Place the loaf pans in it and brush milk over them. Bake them uncovered for 35 minutes or until the crust appears golden brown or become dry or firm.
  • Remove the pans from the oven. Remove the bread from the pans. Place them over the wire rack to cool down. It is gratifying and a deep sense of pride to hold beautiful homemade bread!

Slice them. Toast it and enjoy with butter strawberry jam. I like to have my fresh bread with orange marmalade.

Store the bread in an airtight bread container to keep it fresh and enjoy it longer.
