He just enjoys bananas and apples, but we also want him to try different flavors. So, moms, this is the recipe for you with my special millet crust twist.

Recipe of Passionfruit banana cobbler

Ingredients for the crust-

  • Millet flour 1 ¼ cup
  • Egg ½
  • Honey 1 ½ teaspoon
  • Margarine ½ cup
  • Salt ¼ teaspoon
  • Coldwater 1/8 cup

Ingredients for the filling-

  • Ripe banana 3 no.
  • Passion fruit flesh ½ cup
  • Passionfruit juice ¾ cup
  • Lemon juice ¼ teaspoon
  • White sugar ¾ cup
  • Brown sugar ½ cup
  • Nutmeg powder ½ teaspoon
  • Vanilla extract 1 ½ teaspoons
  • Bourbon 1 teaspoon
  • Cornstarch 2 tablespoons

Ingredients for Topping-

  • White sugar 1 tablespoon
  • Butter (melted) 1 tablespoon
  • Almond paste 1 cup
  • Shortening 16 tablespoon
  • Almond extract 1 teaspoon
  • Flour 2 2/3 cups
  • Cornmeal 8 tablespoon
  • Vanilla ice cream

Method

Step-1 Preparing the crust

  • Warm up the oven to 180 degrees Celsius.
  • To prepare the crust for the passion fruit banana cobbler, sieve through the millet flour and salt mixture in a large mixing bowl. Add honey and margarine and blend lightly with fingertips to a crumbly texture. Whisk egg and cold water together. Squish it in the crumble little by little at a time until it turns out into nice, soft dough. Chill the dough for 30 min to stabilize it.
  • After 30 minutes, roll out 1/8 inch thick bread from it.
  • Smear lard on the baking dish. Spread the rolled-out bread in the dish such that it covers the bottom and half on the sides.
  • Take a gable on the pizza crust surface and bake until lightly golden or for 20 minutes.

Step-2

  • The passion fruit banana cobbler requires combining lemon and passion fruit juice in a bowl.
  • Mix diced banana, passion fruit pulp, white and brown sugar, bourbon, vanilla extract, corn flour, and nutmeg, in a large bowl.

Step-3

In a large bowl, mix almond paste, sugar, butter, and Shortening. Now add flour, cornmeal, and almond extract. Bring all together. Cover and place the dough in the fridge overnight.

Step-4

Pour the fruit mixture as prepared in step-2 into the baked crust. Spread the crumbly topping and 1 tablespoon white sugar. Add a dash of butter before putting it in the oven. Preheat oven to 180 degrees Celsius and bake for 30 minutes, or until golden brown.
